A New Bread Technique

I know I only have a few family members who are interested in different ways to make bread, but this is so cool that I have to put it on here! At Enrichment, we learned about an Italian tradition where you soak the yeast with flour and water in the fridge overnight. The result is a "wet loaf" instead of a "dry loaf." The loaf is lighter, moister, and it holds together better. It really is amazing.
