This Cheesy Cauliflower Chicken is a quick, easy, and child-pleasing dinner!
And, how could it not be, with all that cheese!
It was born from a need to use up an extra head of cauliflower, and knowing I had pre-cooked shredded chicken in the freezer and a bell pepper in the fridge and less than 15 minutes until the kids officially starved!
It was super fast, super easy, super healthy, and (the best part...) everyone loved it!
* 2 tablespoons olive oil
* 3/4 cup-1 cup water
* 2 cups shredded chicken
* 1 head chopped cauliflower
* 1 large chopped red bell-pepper
* 1/2 large chopped onion
* 2 cups shredded cheese
* spices to flavor: salt, pepper, oregano, garlic
1- Put the chicken, cauliflower, pepper, and onion in a large frying pan with the oil and water. Bring to a boil, cover, and cook for 5-7 minutes.
2- Uncover, turn heat down, add spices to taste, and let simmer until water cooks out (about 1-2 more minutes). Turn heat off.
3- Cover with cheese and put lid on until cheese melts.
4- We served on top of a whole wheat tortilla, but you could add a side of rice, bread, or quinoa if you'd rather!
